
Hypomesus nipponensis
A tiny, translucent schooling smelt that is the star of East Asian ice fishing. In winter it gathers in huge numbers under the ice of frozen lakes and reservoirs. Anglers drop fine multi-hook rigs through drilled holes for a lively catch.

Fine multi-hook rigs tipped with red maggots or small larvae dropped through the ice.
Eaten whole as tempura or deep-fried; sweet and delicate.
Told from young ayu by its smaller size and lack of the sweetfish scent.
